Chitting is a method of preparing potatoes for planting. We place our seed potatoes in the bottom of an open brown paper bag and put them in a light and cool place shielded from direct sunlight. All but three or four of the "eyes" of the potato are removed, leaving the strongest growths only.

Potatoes grow best planted in rows spaced 3 feet apart. Dig a trench 6 to 8 inches deep and place the eyes 👀 facing up. Space the seed potatoes 12 to 15 inches apart and fill the trench with 4 inches of soil. As the plants grow, add more soil, mounding it up around the plants. Potatoes also perform super well in grow bags and can give you a bountiful harvest. One pound of seed potatoes should yield about 10 pounds of edible potatoes!
